Hot holding is where most stores lose product, and it is where the rules are most often half-remembered. The number is 135°F. Everything else on this page is about what happens around it.

The rule

Hot food is held at 135°F (57°C) or above. Not 140°F, which is the older figure many people still quote, and not "hot to the touch". The Food Code moved to 135°F and most jurisdictions followed, but this is worth confirming with your health department once, because a handful still enforce 140°F.

Reheating is not holding. Food that has dropped below 135°F cannot be nudged back with the steam well: it has to reach 165°F, and it has to get there within two hours. A well that takes three hours to bring a pan back up has not reheated it, it has incubated it.

Where to take the reading

The reading has to come from the food, not the equipment. A steam well readout describes water, and a hot-hold cabinet display describes air.

Hot holding wants more frequency than cold, because it drifts faster and it drifts downward. Every two hours is a defensible standard; hourly through a peak is better.

The four-hour rule, which decides everything

When a reading comes back under 135°F, exactly one question determines what happens next: how long has it been there?

The reason the log matters is that it is the only thing that can answer the question. Without it, every out-of-range reading is an unknown, and every unknown is product in the bin. A store that logs every two hours throws away a pan. A store that logs at closing throws away the day.

The failures worth designing out

The pan that is always low. Usually the one at the end of the well, or the one under the heat-lamp gap. Move it, do not keep reheating it.

The well filled with cold product. A steam well holds temperature, it does not achieve it. Product goes in at 165°F or above, or it never catches up.

Rush recovery. Right after a peak, everything has been opened, stirred and served from. That is the highest-value moment to take readings and the moment nobody has time. It is also why the round after the rush is the one worth protecting.
